From Winnie the Pooh: "Cottleston, Cottleston, Cottleston Pie / Why does a chicken? / I don't know why / Ask me a riddle and I reply / Cottleston, Cottleston, Cottleston Pie."
I needed a name for this simple and hearty recipe, and Cottleston Pie needed a recipe to go with it, so here they are, joined at last!
Serves 3-4 hungry people. (I cut the pie into sixths, but some people always want seconds!)
Preheat oven to 350 degrees.
Add 1 c boiling water to 1 c Nature's Burger; let stand for 15 minutes.
Press the Nature's Burger into a greased deep-dish pie pan, covering the bottom and coming part way up the sides.
Bake this pie crust for 15 minutes or until firm.
Prepare mashed potatoes according to package instructions, but add the peas and corn to the liquid so they will cook as the liquid comes to a boil.
Add the potatoes to the pie crust, them top the pie with the grated cheese.
Bake for 20-30 minutes or until cheese begins to brown.
